Ultimate Breakfast Quesadilla - Review

Hi, I am Donna and this is my first post reviewing recipes. I am always looking for cheap, fast, nutritious meals. Some points I hope to evaluate are:
1-is this really a meal recipe or just the entre
2-what does it cost to buy ingredients
3-how fast is it
4-does it have nutritious ingredients that most people eat and that is available in general.

Although this is a Breakfast meal, I am using it for a fast supper. I am cooking for 2. Recipe calls for 24 10 inch tortillas which I did buy, but did not use. I had 4 leftover 6-in tortillas and there are only 2 in my home, so I used the 6 inch and cut down eggs to 2 per person. One shallot instead of onion, a jar of pimento pepper in freezer that I wanted to use up, 1/4 bag of bacon bits in freezer I wanted to use, and green salsa I had leftover. I do not have a George Foreman quesadilla maker so I used a small cast iron pan.

Following the recipe, I toasted bacon bits in small amount olive oil and removed from pan.
2-chop shallot, pimento, and 4 oz can mushrooms fine. then saute in same bacon pan till tender. remove from pan.
3-whisk two eggs at a time [I did not add salt and pepper but should have], and cook in same pan until well set. Remove from pan.
Butter one side of each tortilla. Put one into same pan, butter side down, add some cheese, egg, bacon, pepper, onion, mushroom, more cheese, second tortilla, butter side up.
Cook like any quesadilla.

Ingredients:
  • Flour Tortillas, 24 count, 10-inch [I bought 8 10-inch at Aldi but did not use]$1.29
  • White Onion, medium, chopped [bought package shallots at Walmart]1.48
  • Bell Pepper, medium-sized, chopped [used frozen pimentos]
  • Mushrooms, sliced (canned or fresh) [4 oz can Aldi]$.55
  • Cheddar and / or Monterrey Jack Cheese, 1/2 pound, shredded [I bought block cheddar at Aldi and sliced with potato peeler]$1.69
  • Eggs, 6 [I used 2-one each Aldi]$1.35
  • Bacon, 1 pound [used 1/4th large package bacon bits in freezer]
  • Picante Sauce [ used leftover green salsa from Walmart]$1.53
My husband really liked this. I thought the bacon and cheese together made it really salty. 
-It really is a full meal. 
-Is it cheap? Using what I had cost me 9.24 / 4 = $2.31 a serving. I will have to wait till I make again so I can get a better feel of the total cost.
-Nutritious? plenty  of vegetables-onion, pepper, mushrooms, protein-cheese, egg, bacon and small amount of carbs-tortillas. My verdict is yes
-fast? It took me less than 30 min to chop and cook so, yes, it is fast
